BobaThe niçois cuisine is a mere reflection of the history of the County of Nice. Nice used to be a part of Provence before it became the County of Nice, and then, in 1860, it finally became French. Therefore, this rather hectic course of history left a trace on the niçois cuisine, which is a real hotchpotch of all these influences!
